- 1 cup garlic scapes, sliced crosswise (about 10 to 12 scapes)
- ¼ cup raw sunflower seeds

Start by chopping the garlic scapes into small pieces. You will be adding them to a food processor, so make sure they are cut into manageable sizes.
Add the chopped garlic scapes, raw sunflower seeds, extra virgin olive oil, Parmesan cheese, basil leaves, and the juice of one lemon to a food processor.
Process the ingredients in the food processor until everything is well combined and forms a smooth paste. You may need to scrape down the sides of the processor bowl a few times to ensure all the ingredients are evenly blended.
Taste the pesto and adjust the seasonings according to your preference. You can add more Parmesan cheese, lemon juice, or olive oil if desired.
